Despite a nondescript stall front, Ming Shan Mutton Soup is one stall that’s power-packed with flavour. Selling a few varieties of mutton soup – such as mutton chops, ribs or tripe soup – as well as fried and steamed dumplings, Ming Shan Mutton Soup sure knows how to choose one or two choice ingredients, make them into a dish, and do that dish well. 

 

 

Established in 1943, Ming Shan Mutton Soup’s secret recipe has been passed down for three generations. The broth is simmered for hours with ginger and more than 11 types of herbs – which contributes to a strong medicinal herb smell that, somehow, seems to work.

 

The mutton chop soup ($6) is full of flavour, albeit a little oily. The bowl comes with many pieces of well-marinated mutton, which are tender and almost fall off the bone. The gamey smell normally associated with mutton is barely noticeable here, dare I say non-existent, which is great for those who normally shy away from eating this type of meat.
